Honey Mousse on Orange Salad


  • 300ml heavy cream
  • 100 g liquid honey
  • 2 eggs (pasteurised)
  • thin orange slices
  • lemon juice
  • fresh orange juice
  • pistachios for decoration


Completely mix honey, egg and lemon juice, then add heavy cream. Pour into 0.5L Whipper. Screw on one N20 Cream Charger and shake vigorously. Chill in the refrigerator.

Serving Suggestion

Decorate the fresh orange salad with the honey mousse and pistachios.

For a 1L Whipper – double the ingredients and screw on 2 N2O cream chargers, one after the other – shake well after attaching each charger.
